Main Ingredients
2 Boneless, Skinless Chicken Breasts(or sub in center-cut pork chops or flank steaks if you want to switch it up)
6 oz. Fresh Green Beans
12 Potatoes (small to medium; Yukon gold or red potatoes preferred)
1 Shallot
½ oz. Salted Butter
1 Tbsp Soy Sauce
1 Tbsp Balsamic Vinegar
2 tsp Honey
2 Tbsp Sliced Roasted Almonds
½ Tbsp Weeknight Hero Spice Blend

1. Prep the Ingredients & Start the Sauce
Fill a medium pot ¾ full with salted water. Cover and bring to a boil on high.
Wash and dry your produce.
Medium dice the potatoes.
Trim the stem ends off the green beans.
Halve, peel, and finely chop the shallot.
2. Cook & Mash the Potatoes
Add the diced potatoes to the boiling water. Cook for 16–20 minutes, or until fork-tender.
Turn off the heat. Drain thoroughly and return to the pot.
Add 2 tablespoons of olive oil and season with salt and pepper.
Using a fork or potato masher, mash to your desired consistency.
Taste, adjust seasoning if needed, and cover to keep warm.
3. Cook & Finish the Green Beans
Meanwhile, in a medium nonstick pan (or large for 4 servings), heat a drizzle of olive oil on medium-high until hot.
Add green beans. Cook, stirring occasionally, for 5–6 minutes, or until lightly browned and slightly softened.
Carefully add 2 tablespoons of water. Cook for 1–2 more minutes, stirring frequently, until the water evaporates and the beans are tender.
Transfer to a bowl, stir in the sliced almonds, season with salt and pepper, and cover with foil to keep warm.
Wipe out the pan for the next step.
4. Cook the Chicken
Pat the chicken dry with paper towels.
Season on both sides with salt, pepper, and the Weeknight Hero Spice Blend.
In the same pan, heat a drizzle of olive oil on medium-high until hot.
Add the chicken and cook 6–9 minutes per side, or until browned and cooked through (internal temp: 165°F).
Transfer to a cutting board, leaving the browned bits (fond) in the pan.
When cool enough to handle, slice crosswise.
5. Finish the Sauce & Serve Your Dish
In the pan of reserved fond, heat a drizzle of olive oil on medium-high.
Add the chopped shallot, season with salt and pepper, and sauté for 1–2 minutes until softened.
Add the sauce:
1 Tbsp Soy Sauce
1 Tbsp Balsamic Vinegar
2 tsp Honey
Optional splash of water if needed
Stir constantly, scraping up the fond, and cook for 2–3 minutes until slightly thickened.
Want it thicker? Cook longer.
Want it thinner? Add water, 1 tablespoon at a time.
Turn off the heat and stir in the butter until melted and the sauce is glossy.
Taste and adjust seasoning.

Lay the sliced chicken on top or to the side.
