  • Pasta, Mushroom, Chicken and Homemade Pasta Sauce Recipe.

    Who doesn't love Pasta? Pasta is one of the world's most accessible foods. While Pasta is often associated with Italy, it's found in every Country making it hard to truly trace the history of Pasta. What we do know is Pasta done right is awesome and this is why Mike and John are sharing this Pasta Dish from their Kitchen. So, let's step into to make an incredible Pasta Dish. Here is what you'll need. Mike and John use a healthy version of Pasta. It's Fiber Gourmet which is 48% less Calories. It's a plant-based Pasta you would never be able to tell the difference between that and pasta as we typically know it. For this dish we are using the Light Penne Noodle. One Chicken Breast. Extra Virgin Olive Oil Butter One half white onion. Fresh whole mushrooms Fresh Spinach. Fresh Parsley Fresh Parmesan Cheese Coarse Sea Salt Fresh Black Pepper. Fresh Garlic Cloves Fresh large tomato. Tomato paste. I did use hunts. Small can. Tomato Sauce small can. Chicken Broth. First prep all of your items. Take your Chicken Breast. Completely wash it Pat Dry and then cut the breast down the middle three times to make three smaller breast strips. Then cut the breasts into cubs by cutting the strips starting at the ends until all cubed up. Place in a bowl. Season with a little Oil Salt, Black Pepper, Parm Cheese Then take one white onion. Cut in half and dice one half into small pieces. Then wash your mushrooms, then slice them with the stem on into several halves. Wash your spinach and place to the side. Take your fresh parsley, with stems and dice it up. Grate your parmesan Cheese and set aside. Now in a frying pan heat up some Oil, and two tablespoons of butter. Once the pan is hot put in your onions and sauté. Constantly stir until they start to turn color. Then add in your Garlic, in this dish we used three cloves. You can use more or less, but we love Garlic. Salt and pepper everything. NOTE: At this point you want to get your water boiling for your pasta and start cooking your pasta for ten minutes. Now add in your Chicken and sauté it all together. Once the chicken starts to turn color add in your mushrooms and continue to stir. At this point we re-seasoned with a little Salt, Pepper, Parm Cheese and a little parsley. Once chicken has turned colors add in your mushrooms and continue to stir. Time to Cut your large tomato into large pieces, you can even use two tomatoes' if you like. Place in frying pan and Continue to stir. Then put in your tomato paste and add a little water and a little chicken broth. Stir well until the sauce and everything heats up well. By this time your Pasta should be cooked not all the way, but AL Dente. Strain the pasta. In the strainer add some parm cheese and toss the pasta around. Now place the pasta in the frying pan with the rest of the ingredients. Stir in well. While that is cooking, keep stirring, and get your serving plates ready to plate the food. On the Plate put a layer of your spinach, Salt, Pepper Parm Cheese and a Slice of Butter cut into several slices and placed around the plate. This is all on the plate before the dish is plated. Now take your parsley and Parm cheese and add to the frying pan and stir well. time to plate it all up. On your plates prepped with your spinach and seasoning add the ingredients from the frying pan on top of the spinach. Season with more Parm and Parsley and enjoy.   • Rice Noodle, Chicken and Broccoli Stir Fry Recipe.

    Stir Frying is a quick sauté of assorted ingredients in a hot pan. It's easy and versatile and brings a perfect balance of taste to your table. Today, we are sharing a Rice Noodle, Chicken and Broccoli Stir Fry Recipe. Dew Owners Mike and John found this recipe and want to take you into Mike and John's World to share the unique delicious taste of this healthy dish with a few of their own variations added. It's always good to get everything ready and prepped before you fire up any oven or pan. This recipe is fast moving so it is even better to have the prep work done ahead of time to avoid scorching and burning. Here is what you'll need. Fresh Organic Broccoli: Wash them very good and then cut the large portion of the stalk off but keep some of the stems. Cut them down to smaller pieces but not too small. 3-Fresh Garlic Cloves: Normally people dice these, but for this recipe we want to slice them instead. Chicken Breasts. I was cooking for 3 so I used three breasts. There is a trick to the chicken breasts I'll tell you about in a moment. Extra Virgin Olive Oil. Coarse Sea Salt Fresh Ground Pepper. 3 Eggs. Low Sodium Soy Sauce. One Fresh Lime I tablespoon of Butter. Ok. I told you how to prepare the Broccoli and Garlic Cloves. Now let's talk about preparing the Chicken Breasts. First wash your Chicken Breasts well. Then pat dry and lay them out on your cutting board. Now you want to butter fly them. Then with a Rolling Pin roll across them to make the breasts thinner. This will allow for a better cook for a stir fry. OK, now you want to start heating some water up for your Rice Noodles. I have this nifty hot water pot. Looks like an old-fashioned Coffee Maker but it is to boil water quickly and safely without using a stove top. Pretty cool. So, while the water is heating get a large Skillet, if you don't have a stir fry pan. A skillet that has higher curved sides works. Coat the bottom of the skillet with Extra Virgin Olive Oil. Now, here is where a cheat a bit. I love butter, so I added a tablespoon of butter to the oil. Once that baby is hot, slightly smoking you want to add your thinly sliced chicken to the pan. STIR LIKE CRAZY! KEEP IT MOVING. Cook the Chicken until it starts turning colors. Then add in your Garlic Slices. Keep stirring. You want to start noticing the tips of the chicken with a little golden-brown look, but don't let it burn. Ok now. You should have your Rice Noodles package opened and already, but I wanted to show you the package, so you know what to get. Put the Noodles in a bowl and pour your hot boiling water over them until they are completely submerged. Leave for ten minutes. Ok, get back to the frying pan while the Noodles are cooking. Now add your raw broccoli to the frying pan and keep stirring. Do not blanch the broccoli, you want them to have a crunch to them for the dish. Removing everything from the pan and into a bowl. Quickly wipe the pan out with a clean cloth. Using the same pan, put back on stove top and add oil again. Let that heat up. While that is heating up Put your noodles in a strainer and cool down with cold water. Make sure it drains well. While the water is draining out of the noodles put your three scrambled eggs in the frying pan and stir will. don't let them fully cook, but let them get close. Then quickly add your noodles to the pan. Stir, then add your Chicken and Broccoli back in and stir. Told you this was a fast-moving recipe and why you needed all your prep down before you started cooking. While you're stirring everything, add in your Soy Sauce for color and flavor and stir more. What's Left you ask? Time to plate it all up and enjoy. But first. Once you plate the food. Cut a fresh lime in half and squeeze the juices over each plate you are serving. Then Dig in.     All of us at Dew Chilli Parlor's Of American want to give a shout out to Springfield Police Officer Pflug. Officer Plfug was recently nominated for the 2023 Illinois Women in Leadership Athena Leadership Award. According to the organization's webpage, Illinois Women In Leadership was a seed planted in many minds several years ago when there was a desire to go beyond. Beyond what people have learned and what a person can do for others, beyond limitations. The Illinois Women In Leadership empowers all women, promotes professionalism and develops leadership abilities through purposeful inclusion, education mentoring, networking and community involvement. Officer Plfug is a shining example of leadership and community commitment. So this is why we wanted to take this time to let her and others like her know how much she and they are appreciated. This is also way we have set aside Wednesdays of every week for All Active/Retired Military, First Responders and Medical Employees as their Day at the Dew.   • WAYS AND SHOES! WHAT?

    The sounds of a working kitchen are echoing all across the North End of Springfield. Hear it? The Dew Cooks are prepping for some great offerings at lunch and dinner today. Today, we are going to focus on what we call our Ways and Shoes section of the Dew Pub and Grill Menu. This is what we call a Way. The Dew Way. There are different versions of the Way to get. The Dew Way #2 is pasta topped with Dew Chilli. You can Substitute the Cincinnati style Chilli if you like. The Dew Way #3 is Mac and Cheese topped with Dew Chilli, or Cincinnati Style Chilli and topped with freshly shredded Cheddar Cheese. The Dew Way #4 is Pasta topped with Dew Chilli, or Cincinnati Style Chilli and Beans topped with Cheddar Cheese. The Dew way #5 is Pasta topped with Dew Chilli, or Cincinnati Style Chilli and Beans and Onions topped with Cheddar Cheese. Let's try on the Shoes now. The Pony Shoe and Horseshoe has become a staple in Springfield, Illinois. The Shoes were created in Springfield many years ago and through the years have grown to be part of the community and the backbone of many businesses. There is much debate about where the Shoe was Created. Where every it was created it is being served up in one of Springfield's landmarks which helped to make the Shoes Famous.   • Dear Valued Customers and Community

    A few weeks ago, a fierce storm, called a Derecho, tore through Springfield and surrounding communities. Nearly every resident and business was impacted by the storm in one way or another. The Dew Pub and Grill on Dirksen Parkway sustained major damage prompting a long evaluation of what was best to do. What would be our next step? Several Factors have gone into the decision to re-open it or keep this location closed. After meeting with staff, insurance officials and many others, the decision, today, has been made not to re-open this location. The storm was not the only factor. It was just the last straw. 5-years ago we signed a lease at the Dirksen Parkway location. The store was doing well and building momentum. Then COVID-19 hit us. Something new to the world forced the closure of businesses around the country. As the small company we are, that was a major blow to us. We took a big hit, loosing tens of thousands of dollars. When the shutdown orders were lifted, we picked ourselves up and dusted ourselves off and began the process of starting over. Then the staffing crisis many businesses are still faced with became a challenge. Just when we were seeing the light at the end of the tunnel from COVID, we get hit again and once again forced to shut down. This time it happened at the end of our lease which is up at the End of this month (July). The big question is can we rebuild this location again after a second major shutdown? Do we sign another 5-years? and would it take 5-years, and tens of thousands of dollars to just to see the light at the end of the tunnel just as our second 5-year term lease was ending? Or do we absorb the loss now and look for another location to open in the future giving us a new and fresh start. Many have advised us considering everything, that would be the better choice, giving us a better chance of building a stronger business for us and our community. The decision was to take the approach of moving on from the Dirksen Parkway location. John Leskovisek, one of the owners spoke with a local realtor. This realtor told John he would be happy to help us find the right spot. We do not know when a new location will be announced, as we are still searching for a location in another market to replace the Dew location which was closed on Wabash Avenue earlier this year. That because the lease there was up. It was a very difficult decision, but after walking through the store for the first time, since the storm the other day, it just didn't feel right to reopen it. Have you ever had that feeling that something just wasn't right? That feeling weighed heavily on us during that walk-thru. Not that this location won't make a great place for someone else but for us it just didn't feel right. Meanwhile, the staff has been reassigned to other store locations providing new opportunities for them to grow. We value our staff so much for without them we would not be here at all. Also, the Dew Pub and Grill located at 301 North Grand Avenue West remains open. It too was forced to close following the storm, but it did not sustain the kind of loss the Dirksen Parkway location has. So, we have decided to invest in that property since we own it and because it is a community landmark once housing the Red Coach Inn. We have been working with Alderwoman Lakeisha Purchase on what would be best for that area, as the North End is going through a rebuilding/revitalization process. The Medical District in the area is expanding largely in part because of the Alderwoman's dedication and hard work in that area. New Management at the North Grand location has been brought in and Daily specials, Like honoring our First Responders, Military and Health Care workers on Wednesdays with a special for all customers to enjoy while honoring these special folks. That has been launched. Other days of the week specials are about to be announced and the store location will begin to take on a new look as we work to give the old building an update. So, while we are saddened by the closure of our Dirksen Parkway location, we are excited about the future of the Dew. The Dew is part of the Character and make-up of our community. Being part of the community since 1909. In a recent Blog Post, we explained how Mike and John often ask themselves what would Joe Do? What does Joe think? The Dew founder is gone but still plays a big role in the major decision processes. The answer came in one of the many writings from Joe, Mike and John hold dearly. "If it don't feel right, it's not right. Move on. Do something good, Ok?" Well Joe, we hear you. We are going to work to do something good. Part of doing something good is building a strong retail division providing more opportunities. The retail division of the Dew is going to be a major focus of the company. It's not quite there yet, but it's happening. Good things are happening. Stores like Hy-Vee, County Market, Country Market, Apple Barn and others now carry the Dew Family Size Cans and Dew Spice Blends on store shelves. Hy-Vee has been aggressively bringing the Dew product into the stores in Springfield, Peoria, Bloomington, Canton and soon 10 other markets. Please support those who are supporting small businesses like the Dew. Who are working to do something good. We are so appreciative and honored these locations are carrying the Dew Product. To you, our customers, our community. We cannot express how touched we have been by your words of encouragement, your support now and through the years.     What comes to mind when you hear the word. CLASSIC? Perhaps something like this beauty. You would agree that this T-Bird qualifies as a classic. Wouldn't you? For others Classical Music might come to mind. Perhaps works of Mozart or Bach. Or just maybe, others think of a classic as something like a Movie Classic. Do any come to your mind? Someone once told me that we have a Classic right here at home. Considering the definition of "Classic" I think they were right.   • He's Watching Over Us.

    Dew Chilli Pub and Grill Co-Owner Mike Monseur doing an interview with News Channel 20 Tuesday. Over Mike's should a portrait of Joe Bocklemann as if he continues to watch over what he founded back in 1909. Mike and his partner, John Leskovisek, bought the Dew in August of 2017 with the hope of continuing the tradition Joe started back so many years ago. The two often stated when tough decisions had to be made, they would ask each other what would Joe do? What would Joe think? Today, two weeks after that devastating Derecho struck those questions are being asked again. What would Joe do? What would Joe think? The two men, who also own Godfather's Pizza say they are waiting for emotions to calm so a sound decision about the Dew location on Dirksen can be made. Today (Tuesday) Mike and John and some of the staff stepped inside the storm tattered location for the first time since the storm hit. Inside pots of Chili left on the stove tops, tabletops with customers dinners and drinks, all frozen in time. All telling a story of the fear and threat that suddenly struck. Customers and staffed scrambled to safety as the strong winds pounded the facility, giant power poles falling all around the building and lightening striking the pole sign sending sparks and flames flying everywhere as customers and staff described. Mike, recalls the phone call he and John got during the storm from the location. The young man on the other end of the call is long time Manager Mike Kisner. "It's on fire! it's exploding! everything is falling!" Monseur recalls those words during that call. Monseur said the fear in his employee's voice, a father of three young boys, is a sound he will never forget. Manager Mike Kisner told TV 20, " Debris came toward the building, My car was actually out there. The powerlines were wrapped around the car." Mike and John stress, that while the emotions are high and the loss is mounting financially, what is a blessing is no one was hurt. "Our Staff working when this hit, and the customers inside enjoying their meals, all walked away, shaken but not hurt" John stated. "That's a blessing" He added. The total extent of the loss isn't known, but it is clear it will be great. Today (Tuesday) staff tossed out thousands of dollars' worth of product, which was just delivered the morning of the storm. Complicating the decision to remain open or closed is the fact that the business was still digging out of the COVID shutdowns. Mike Monseur stated " We were doing well, then COVID hit pulling the rug out from underneath us. Just when we felt like we were able to breathe a little better, this happens. It's a double Whammy, one that we just aren't sure we can pull out of again." Mike goes on to recall where he and John and his manager would sit in the dinning room. "We would sit over there" He told TV 20, "we would just laugh and smile as we watched people, families having a good time here. And to see it like this now hurts. It does hurt." Mike and John stress how proud they are of their community Springfield, Illinois. Both stating, they watched the daily news conferences the Mayor held and noticed just how tired the City Officials looked. "Doug Brown of CWLP, looked like he hadn't slept at all. The man was just exhausted" Mike Monseur said. John added " Think about this. A Brand New Administration and the administration kicked into gear and in our opinion did an outstanding job." The two added, yes people were frustrated for being out of power, but considering the enormity of the storm and destruction, no one was seriously injured, not one life was lost. The two emphasized "Our City did a great job! we are so proud of them, and proud of all involved to get our lives back to normal." So, while the business may be a loss, if that is all that was lost Mike and John stress we all have come out a winner. Dew Pub and Grill has another location at 301 North Grand Avenue, which was also closed for a couple of days along with a Godfather's Pizza. Customers from the Dirksen Dew are finding their way to the North Grand location, for their favorite, drinks, horseshoes, pastas and sandwiches and just in a show of support of the business, which is lifting the spirits of the staff who miss them. Several meeting will be taking place this week. But early next week a decision on the future of the Dirksen Parkway store location should be made. Updates to follow. dewchilli.com

    They say a picture is worth a thousand words. This picture tells just part of the story following the recent devesting storms that hit Springfield and Sangamon County. Today, the Dew Chilli pole stands tattered. Also, today for the very first time we will go inside the building that once was full of life, fun and laughs. The attention we have been getting about the Dew Pub and Grill has been uplifting. Media calls us daily as it is still very clear that our future is unsure. This link is one of those stories. We've been told by those who have gone inside to prepare ourselves. But while the Future of the Dew Pub and Grill on Dirksen Parkway remains uncertain. What is certain is what is most important. No one was hurt, no one was killed. What is also for certain is that we have a lot to be proud of. Our City Leaders and Crews are to be applauded. To be faced with such a devastating challenge, they took that challenge on and did an amazing job!
